Hypertext can refer to the text that contains hyperlinks or the actual hyperlinks themselves. Once a hyperlink is clicked, it navigates you to another file or another location on the same file. Hypertext means different things in different contexts. You can have a "hypertext document" (e.g. an HTML document) or hypertext can refer specifically to hyperlinks (the type of text that gives it its actual name), but if you use an image as a hyperlink, you would not refer to the image as hypertext (given that it is not text). Hypertext allows users to quickly jump to different content. Though usually associated with webpages and being written in HTML, the technology has been around since the 1960s.
